Guest Post: Sexy Strawberry Salad

Hi there! Chloe and Steph here from 321delish! We are a duo of triathletes who LOVE food! We’re filling in for Lauren, and are here to share a recipe from one of our Eating Club meetings!

Yes, that’s right, we have an Eating Club. We like to surround ourselves with friends who love food. And man, do these ladies know how to eat!

Back in February, we had an Eating Club meeting with the theme “Sexy.” We had lots of yummy dishes, but one of them, the “Sexy Strawberry Salad” seemed fitting to share with you today, since strawberries are in season!

What you Need:

Greens (any leafy summer mix will do!)

Hearts of palm (you can usually find them canned)

Walnuts (candy coated would make this salad even more amazing)

Fresh Strawberries

Vinaigrette (recipe below)

Strawberry Salad Vinaigrette

1/3 cup cider vinegar

3/4 cup sugar

2 tablespoons fresh lemon juice

1 teaspoon salt

1 cup vegetable oil

1/2 small red onion, grated

1 1/2 tablespoons poppy seeds

1 teaspoon dry mustard

1/2 teaspoon paprika

What to do:

Combine the vinegar, sugar, lemon juice, and salt in a small non-reactive saucepan and heat over medium heat until the sugar dissolves, stirring frequently.

Remove pan from heat and let cool to room temperature.

When cooled, whisk in the oil, onion, poppy seeds, dry mustard and paprika until thoroughly combined.

Be sure to stop by 321delish for some other Eating Club recipes and other fun stories about our triathlon training and LOVE of delicious food!

  1. Strawberry salads are my FAVORITE. I love them. My husband always throws ranch dressing on his, though. Crazy!:)
